This recipe is based around an original recipe for Szechuan Turkey Noodles from the Thai and Chinese Cookbook edited by Gina Steer. As Szechuan noodles are usually spicy and sadly neither me or my sister can eat spicy food we have to alter recipes to suit our pallets.

This is a great simple family friendly recipe, plus it is fairly cheap as turkey can often be picked up at a lower cost than other meats in places like Lidl, and noodles are always easy to find at really cheap prices - I often buy the Tesco value 'super noodles' and just cook them without the flavouring (around 11p a pack just use 1 per person). It's simple ingredients but bursting with flavours, sure to be enjoyed by all the family.

What you will need:

  • 450g Turkey, cut into chunks
  • 2 Courgettes, cut into strips
  • 225g dried egg noodles, (or an alternative if you rather)
  • 2tbsp tomato puree
  • 2tbsp black bean sauce
  • 2tsp cider vinegar
  • 2tsp sugar
  • 4 tsp sesame oil
  • 2tbsp groundnut oil
  • 4 shallots, peeled and finely chopped
  • 2cloves/1tsp garlic/lazy garlic, crushed if using cloves

How to make Chinese Turkey Noodles

  1. First you want to make your sauce: Mix together your tomato puree, black bean sauce, cider vinegar, sugar and 2tsp of sesame oil. (You can also add salt and pepper to taste although we use none in any of our cooking). Then place it all in the fridge to chill for 30 minutes (you can chop your veggies and meat now)
  2. Cooking the main part of the dish: Heat your groundnut oil in a large cook or pan, once very hot add the garlic and chopped shallots and stir for a few minutes until starting to colour.
  3. Add your courgette and turkey to the pan, stir fry on a high heat stirring occasionally. (While meat is cooking do step 4) Once the meat is cooked add your sauce and cook, mixing well for a further 3-4 minutes.
  4. Lastly cook your noodles: if using basic egg noodles boil your kettle, add to a large saucepan on high, add your noodles and cook for 3-5 until cooked. Drain, then toss with the remaining sesame oil ready to serve If using other noodles cook by the instructions, then drain and toss with sesame oil.
  5. Serve and enjoy!

Here are a few alternative ideas to make those noodles even better:

  1. If you like a little spice in your Chinese food then add a small chopped red chilli pepper to your sauce for a nice added kick.
  2. For an even more authentic Chinese taste add 2tsp grated ginger root and 4 finely sliced spring onions to your stir-fry
  3. Like it a bit more veggie friendly? Switch out the turkey for thickly sliced mushrooms or even cubes of tofu if it's your thing!
